Most of the city’s creative dining scene clusters in the center, but Amador makes a better case for the outskirts. While its peers in the inner districts rely on history and vaulted ceilings, the room here runs smart and elegant in a converted cellar that feels separate from the tourist crush. Choosing this over a central table is a deliberate trade; you lose the walkability of the old town, but you gain a singular focus that rarely exists in busier, more conventional dining rooms.
