A well-known innovative fusion store in Higashi Ginza. Chef Furuta's finely honed sensibility creates a variety of dishes that make the most of the umami of the ingredients, and are delicious beyond description. Not only the deliciousness and beauty of the food, but also the splendor of the tableware (Japanese and Western antiques) served. The selection of wines is impeccable.

A lot of people were praising it, so it's a shop that I really wanted to go to. After moving from Gifu, it became a very popular store where reservations could not be taken as soon as it opened. There is only a counter in the store, and after taking a seat, you will feel a sense of exhilaration, thinking that the best time will begin. I asked for half pairing with one course. Ayu soup I was surprised from the beginning with a dish made by pasting the ayu with the cotton, and the flavor of the ayu was wonderful. Rice vermicelli with shiitake mushrooms The thick shiitake mushrooms have a condensed flavor and go well with simple rice vermicelli. Conger pike and Junna Large conger eel and refreshing Junna are perfect for summer. ■ Truffle porcini consommé soup Enjoying the scent of truffles Wild eel potato sauce caviar The charcoal-grilled natural eel was crispy on the skin and fluffy on the inside, and was very delicious. Hats off to your sense of matching the potato sauce and caviar with the eel. Kobato nameko mushroom sauce red vinegar This is also a charcoal-grilled pigeon with a crispy skin and exquisitely cooked meat. Black pork Kujo miso In addition, the charcoal-grilled black pork has a sweet taste with Kujo miso. Abalone Ojiya The rich abalone ojiya was so delicious that I thought I had the best time at the end. Shaoxing wine ice cream The smooth ice cream that is finished in front of you is a dessert where you can enjoy the flavor and sweetness of Shaoxing wine. ■ Pie tea Finally, I felt that I was particular about ending with Chinese tea. Each and every dish, filled with elements of cuisine from many different genres, was completely innovative, and from start to finish, I was amazed by the deliciousness that surpassed my imagination. I made a reservation for the next time on the way home. I plan to visit again next year, and I'm already looking forward to it.
